Tuscan Bread and Tomato Salad (Panzanella)
Cut a 14oz Artisan sourdough baguette into 1 inch cubes (yield 10 c.) Combine 2 T melted butter and 7 T olive oil. Add 1 tsp. minced garlic; pour mixture over bread cubes. Mix well. Spread cubes on cookie sheet in one layer. Bake 15 minutes @ 350. Cool.
Combine: 2 T red wine vinegar
1.5 tsp sea or kosher salt
.5 tsp pepper
Chop 4 c. tomatoes
Chop 1 oz package fresh basil (1.5 c)
Combine bread, tomatoes, basil, and dressing.
4 large servings
**serve with cheese and fruit**

Candied Chicken
Ingredients:
1 ½ cup brown sugar
2 tsp. Prepared mustard
2/3 cup ketchup
2 Tbsp. Worcestershire Sauce
½ tsp. salt
½ cup water
1 Tbsp. minced onion
1 tsp. milk
1 egg, beaten
flour
about 2 lbs of chicken tenders, or breasts cut into strips
Combine first 7 ingredients in saucepan and heat for 2 minutes. Combine egg and milk in a bowl. Dip chicken tenders into mixture and then into flour. Cook over medium heat with butter or margarine in a fry pan until golden brown. Place cooked chicken in a greased 9x13 pan. Pour sauce over chicken. Cover pan with foil and bake at 325 for 30 minutes. Remove foil and cook additional 30 minutes. Serve with rice.

Well yesterday DD went to give her doll a bath. I was feeding LM at the time and told her over and over that it was a PRETEND bath. She seemed to understand. She went into the bathroom and then DH walked by the door and she had her doll on her potty. DH said, "Is your doll going potty before her bath?" DD,"Yeah." and then the next thing I know she is bringing her doll out WET to me. I yell for DH because she has given her doll a 'bath' in our TOILET!!! EWE!!! He took the doll from her and then she was wiping her wet hands on the couch and my CLEAN clothes I had just folded. I was calling for DH to get over and stop her. It was so gross.

I had to pump once I got home and then only 30 minutes later LM was waking up. I knew I didn't have enough milk yet to feed him and he shouldn't have been hungry so I picked him up and was able to rock him to sleep but had to keep patting him/rocking him for over and hour. I finally was able to lay him back down to sleep at 1am. It was a lot later than I wanted.
Today was DD's last swim class. She just LOVES jumping in the water. He grandparents came to watch her (babysit LM too since DH was at his motorcycle class). She loved showing off for Grandpa and Grandma. It was so cute. She got a little certificate of completion too! It's kind of sad that the session is over now.

I hosted recipe group at my house tonight. It was so yummy! I made the main dish of Candied Chicken (I posted the recipe earlier). We didn't have a big turn out. I think a lot of people were gone for the summer but it was nice to visit with those that came. I loved this Tuscan bread and tomato salad we had. I posted that recipe too! It was so delish!!!
LM is really starting to understand the "Cause and Effect" aspect. He was kicking his feet on DH's chest and DH would make a certain sound while he was kicking. He would stop and start again. It was cute to watch. He's also really getting good with he eye/had coordination. He is seeing his binky and now can reach out and grab it and put it in his mouth (it's usually turned sideways so it won't stay in). It amazes me at how fast he's growing up. I can't believe he will be 6 months soon! Where did the time go?
The Wrestling Begins
DD loves having me fill up her buckets with water while I water the plants. She had so much fun pouring it from one bucket to the other that she was SOAKED. Since it was a hot day I decided to just go with it and let LM join in the fun along with me. It was great to just be a kid and play in the water fully clothed.
I had girl's night last night and it was AWESOME. We were at the restaurant for over 2 hours just chatting and eating. It was so yummy and lots of fun. I just love Henry's. They make the best pot stickers ever. Some of the girls that I drove down chatted a little more at my house before heading home. It was a wonderful evening.
